Garlic and Herb Mashed Cauliflower
Ingredients
- 1 head of cauliflower washed, and cut up
- 2 Tbsp unsalted butter
- 1 yellow onion
- 3 garlic cloves, minced
- 1 Tbsp fresh thyme, chopped
- 1 Tbsp fresh rosemary, chopped
- Salt & pepper to taste
Directions
- Place the cauliflower in a steamer, salt and pepper if desired and steam until soft (8 -10 minutes and test with a fork)
- Heat 1 Tbsp of butter in a frying pan over medium heat.
- Sauté garlic, onion, and herbs until onion becomes tranlucent.
- Place steamed cauliflower in a high-speed blender or food processor. Add the sautéed onion, garlic and herbs along with the second Tbsp of butter. Process until smooth.
- Garnish with a sprig of rosemary, or fresh pepper, or both!
