Garlic and Herb Mashed Cauliflower

Ingredients

  • 1 head of cauliflower washed, and cut up
  • 2 Tbsp unsalted butter
  • 1 yellow onion
  • 3 garlic cloves, minced
  • 1 Tbsp fresh thyme, chopped
  • 1 Tbsp fresh rosemary, chopped
  • Salt & pepper to taste

Directions

  1. Place the cauliflower in a steamer, salt and pepper if desired and steam until soft (8 -10 minutes and test with a fork)
  2. Heat 1 Tbsp of butter in a frying pan over medium heat.
  3. Sauté garlic, onion, and herbs until onion becomes tranlucent.
  4. Place steamed cauliflower in a high-speed blender or food processor. Add the sautéed onion, garlic and herbs along with the second Tbsp of butter. Process until smooth.
  5. Garnish with a sprig of rosemary, or fresh pepper, or both!
  6. Enjoy!
