Michelle's Famous Roasted Yams
Ingredients
- 5 cups yams*, peeled and diced
- 12 -15 whole cloves of garlic, peeled (cut the bigger ones in half lengthwise)
- 3 tablespoons coconut oil or bacon grease
- 1 teaspoon cinnamon
- 1 teaspoon fresh thyme leaves, minced
- Sea salt and black pepper to taste
Directions
Preheat oven to 400. In a large mixing bowl, toss the sweet potatoes and garlic with the oil, cinnamon, thyme, salt and pepper. Spread the potatoes evenly in a 9×13 baking dish. Bake for 35-40 minutes, stirring half way through the cooking time.
Serves 5-6.
* the ones that are ORANGE in the middle, not yellow! The yellow ones are sweet potatoes.
