Roasted Brussel Sprouts with Bacon and Balsamic Glaze

Ingredients

  • 680 g (1.5 lbs) Brssel sprouts
  • 113 g (4 oz) bacon or pancetta diced
  • 2 garlic cloves, finely chopped
  • 60 mL (1/4 cup) olive oil
  • Salt and pepper to taste
  • 30 mL (2 Tbsp) balsamic glaze 
  • 60 mL (1/4 cup) roastes pistachios, coursely chopped

Instructions

  1. Preheat oven to 400 degrees
  2. Trim and remove any dried outter leaves from the Brussel spouts and cut lengthwise
  3. Place Brussel sprouts on a baking sheet on parchement paper
  4. Add bacon and garlic, then drizzle with olive oil
  5. Season with salt and pepper
  6. Toss well and spread into a single layer
  7. Roast for 20 - 30 min or until tender and nicely browned, tossing once halfway through
  8. Remove from the oven and then drizzle with balsamic glaze and toss
  9. Top with pistashios and serve
