Peach oatmeal bake

Yield: 4 servings | Prep time: 10 minutes | Cook time: 45 minutes

Ingredients

  • 1 Tbs. butter, for greasing
  • 2 cups milk
  • 1 egg
  • ¼ cup honey or maple syrup
  • 1 tsp. vanilla extract
  • 1 ½ cups oats
  • ¼ tsp. salt 
  • 1 tsp. cinnamon
  • 1 tsp. baking powder 
  • 1 cup sliced peaches (canned in juice or fresh)
  • 1 cup plain or Greek yogurt, optional, for serving

Directions

  1. Preheat oven to 375° F and grease an 8x8-inch baking dish with butter. 
  2. In a medium bowl, mix oats, salt, cinnamon and baking powder. 
  3. In a separate bowl, combine milk, egg, honey and vanilla.
  4. Add wet mixture to dry, then add peaches. If using canned peaches, be sure to drain before adding.
  5. Pour entire mixture into a greased baking dish and spread out evenly.
  6. Bake for 40-45 minutes until golden brown on top. 
  7. Divide between 4 bowls and top with yogurt.
