Chicken Cordon Bleu
CHICKEN CORDON BLEU
- 6 boneless chicken breast halves, pounded to ¼ inch thickness
- 6 slices Swiss cheese
- 6 slices shaved Black Forest ham
- 4 tbsp. Dijon mustard
- 2 tsp. honey
- ¾ cup bread crumbs
- 2 tbsp. vegetable oil
Cover each chicken breast with a slice of cheese and a slice of ham, trim to fit. Roll up lengthwise and secure with one or two toothpicks.
In a small mixing bowl combine mustard and the honey, spread half the mixture evenly over each chicken roll with a basting brush.
On a sheet of wax paper arrange bread crumbs then roll chicken pieces in the crumbs, coating all sides. Arrange chicken on nonstick baking sheet and drizzle each with 1 tsp. of vegetable oil.
Bake until chicken is cooked through, about 25 to 30 minutes at 375̊F
To serve, remove tooth picks and place on platter
