Chicken With Grapes

  • 4 medium boneless skinless chicken pieces
  • ½ cup apple juice or apple cider
  • 1 teaspoon cornstarch
  • 1 cup seedless grapes, halved (red or green or some of each)

Spray a large skillet with cooking spray, preheat skillet over medium heat. Add chicken and cook over medium heat for 10 minutes or until tender and no longer pink, turning occasionally to brown evenly. Remove from skillet and keep warm.

Meanwhile, combine apple juice, cornstarch and add to skillet. Cook and stir till thickened and bubbly. Cook and stir two minutes more, stir in grapes and heat well. Serve over the chicken.
