Coq Au Vin

COQ AU VIN

  • 1 whole chicken cut into pieces
  • 2 tbsp. butter
  • 4 oz. bacon cut into narrow strips crosswise
  • 2 large onions, diced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, crushed
  • 3 tbsp. flour
  • 1½ cups dry red wine
  • 1 cup chicken broth
  • Pinch of thyme
  • 2 bay leaves

In a large skillet, cook the bacon and butter over medium heat for two to three minutes, add the chicken pieces, season and cook until browned all over (six to eight minutes).

Turn the heat up to medium high and add the onions, garlic, mushrooms and flour. Stir gently and add the wine. Cook rapidly for three or four minutes. Pour in the chicken broth, add the bay leaves and thyme to the pan. Simmer for 30 minutes or until chicken is tender.
