Apple Jelly

  • 4 cups bottled apple juice
  • 7 cups white sugar
  • 2 pouches Certo liquid
  • A few drops of red food coloring

Sterilize jars and lids.

Measure juice into a large saucepan, add the exact amount of sugar shown above. Place over high heat and bring to a rolling boil, stirring constantly. Immediately stir in Certo and continue to stir over high heat for one minute.

Remove from heat and skim off any foam with a metal spoon. Add food coloring if desired. Skim and stir for 5 minutes, making sure mixture is uniformly thick.

Quickly ladle into hot sterilized jars, cover with lids and screw rings on tightly. Do not disturb for 24 hours.

Makes about 7 half pint (jelly) jars.
