Cranberry Whipped Cream Salad
- 1 can crushed pineapple (8 oz.)
- 1 package raspberry Jell-O (3 oz.)
- 1 can whole cranberry sauce (16 oz.)
- 1 tsp. shredded orange peel
- 1 can mandarin orange slices (11 oz.)
- 1 cup whipping cream
Drain pineapple and reserve syrup. Add boiling water to reserved liquid to make one cup and dissolve Jell-o in hot liquid.
Stir in cranberry sauce and orange peel, chill until partially set.
Fold in orange sections and pineapple. Whip cream until soft peaks form, fold into fruit mixture. Pour into 6 cup mold and chill until set.
