Southwest Omelet

  • 4 eggs
  • 4 tbsp. water
  • Salt and pepper to taste
  • 2 tbsp. butter
  • ½ cup salsa or chili sauce

Beat together eggs and water, season with salt and pepper.

Heat frying pan at medium high, melt butter in the pan.

Pour in egg mixture. As it sets at the edges, with a spatula push cooked portions toward the centre. Tilt and rotate the pan to let uncooked egg to flow to empty spaces.

When egg is almost set on the surface but still looks moist, cover one half the omelet with salsa. Slip spatula under the omelet, fold it in half, heat for one minute the slide it onto a warm plate.
