Strawberry Jam
- 4 cups strawberries (liquid measure)
- ¼ cup lemon juice
- 7 cups sugar (dry measure)
- 1 pouch Certo liquid
Sterilize 7 jam jars, lids and rings.
Hull and thoroughly crush strawberries, one layer at a time. If the berries have had a lot of rain before picking, drain off some of the juice until the mashed strawberry mixture is fairly thick.
Carefully measure exact amount of fruit into large saucepan, add sugar and lemon juice, mix well.
Place pan over high heat and bring to full rolling boil, stirring constantly. Boil hard for exactly one minute then remove from heat. Immediately stir in the Certo. Stir and skim with a metal spoon for 5 minutes to remove any foam and to prevent any floating fruit.
Pour into hot sterilized jars, add lids and screw lids tight.
