Herb Fried Potatoes
- 3 or 4 medium size potatoes, thinly sliced
- 3 tbsp. butter or margarine
- ½ tsp. oregano
- 2 tbsp. each finely chopped parsley and onion
- fresh ground pepper
Melt butter in a large frying pan, add the sliced potatoes, evenly spaced around the pan. Cover and cook over medium heat for 10 minutes. Turn carefully and cook uncovered for another 10 minutes, turning occasionally to brown all sides.
For the last five minutes, sprinkle with oregano, parsley and onion. Turn over mixture to cover all potatoes with herbs and onion. Add salt and pepper to taste.
