Coconut Crusted Basa

Ingredients

  • Basa fillets (we use frozen package that includes 4 or 5)
  • 1 tbsp coconut oil
  • Coconut flour (depends on amount of fish, about 1/2 cup)
  • 2-4 eggs

Instructions

  1. Let frozen fish thaw in the fridge overnight, or in a sink of cold water.
  2. Heat the coconut oil in a large pan.
  3. Whip eggs in a medium size bowl.
  4. Lightly dust a plate with coconut flour.
  5. One at a time, dip the basa fillets in the eggs and then in the coconut flour.  Add more flour as needed, fish should be lightly dusted on each side.
  6. Place fillet in the hot pan, cook approximately 4 minutes on each side, until fish is no longer translucent. 

*If you like coconut a lot, add a few tablespoons of shredded coconut to the fish before pan-frying. 

*If you don't like coconut as much, mix a bit of almond flour in the coconut flour before dusting the fillets.

*If you want to add a bit of kick, add some cayenne pepper/paprika/chili powder to the coconut flour before dusting.
