Ground beef Stir Fry
Ingredients
- 2 tablespoon coconut oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 red jalapeño peppers, seeded and sliced
- ½ red onion, sliced
- ½ large zucchini
- 3 carrots, peeled and grated
- 1 small head broccoli, chopped
- ½ red or orange bell pepper, thinly sliced
- 6 sliced button mushrooms
- 1 lb ground beef
- dried sage, to taste
- turmeric, to taste
- sea salt, to taste
- coarse ground black pepper, to taste
- fresh thyme, to taste
Sauce Ingredients
- ½ cup coconut aminos or gluten free soy sauce
- 3 tablespoons honey
- 1 tablespoon Sriracha
- 1 teaspoon sesame oil
- ½ teaspoon fish sauce
- 2 tablespoons tapioca starch, divided (for thickening)
Directions
- Melt coconut oil in a wok (or large sauté pan) over medium heat.
- Add ginger, garlic and jalapeño pepper to the wok. Stir to combine and cook for 5 minutes.
- When garlic becomes fragrant, turn heat on low then add coconut aminos. Be sure that the pan has cooled down a bit before to keep the coconut aminos from splattering everywhere.
- Once coconut aminos have been added, increase heat to medium-low and add honey, sriracha, sesame oil and fish sauce.
- Bring sauce to a slow boil, then add 1 tablespoon of tapioca starch, a bit at a time and whisking to incorporate into the sauce.
- Move sauce to a separate bowl and add ground beeef to the wok, breaking it appart until the beef is no longer pink.
- Season meat with a sprinkling of dried sage, turmeric, sea salt, black pepper and fresh thyme. Stir to mix all ingredients together well.
- Add red onions.
- Wait a minute and add carrots, and broccoli.
- Wait a minute or two and add the zucchini, mushrooms and sliced bell peppers.
- Since the meat will render some liquid, add the remaining tablespoon tapioca starch into the mixture, a bit at a time, whisking the powder in with the mixture.
- Add the sauce back into the pan and incorporate with the meat.
- Top stir fry off with chopped green onions.
- Optionally, this can be served as is or over rice, quinoa or cauliflower rice
