Date Loaf
DATE LOAF
- 1½ cups chopped dates
- 1½ tsp. baking soda
- 1¼ cups boiling water
- 2 eggs
- 1 cup brown sugar
- 1 tsp. salt
- 1½ tsp. vanilla
- 2 cups flour
- 1½ tsp. baking powder
- ⅓ cup vegetable oil
Chop dates, put in small bowl, cover with baking soda and pour boiling water over them. Mix and let stand to cool.
Beat egg until light, add sugar gradually, beating between additions. Add salt and vanilla, then date mixture. Add sifted dry ingredients then vegetable oil. Mix everything well. Pour into well-greased loaf pan and bake at 325° for one hour and 15 minutes. Before removing from oven, check for doneness by inserting a knife in the centre of the loaf. It should come out clean. If it doesn't, cook a few minutes more.
