Fruited Scones
FRUITED SCONES
- ½ cup sugar + 2 tbsp.
- 3 cups sifted flour
- 4 tsp. baking powder
- 1 tsp. cream of tartar
- ½ tsp. salt
- ½ cup shortening
- 1 cup raisins
- 1 large egg
- 1 cup orange juice
- Chopped fruit bits (optional)
Soak the raisins in orange juice.
In a large bowl measure the sugar, flour, baking powder, cream of tartar and salt. Cut the shortening into the dry ingredients with a pastry blender until the size of peas. You can also add chopped fruit bits to add flavor (the kind used in Christmas cake). Add the egg, raisins and orange juice and stir a few times to mix well.
Pick up dough between the palms of your hands and shape into a ball then pat on a floured surface to a 10" by 14" rectangle. Cut it in half lengthwise then cut into 12 even squares, then cut each square diagonally to make 24 triangles.
Pick up each one carefully with a spatula and put onto two greased cookie sheets, about 1" apart. Sprinkle top of each with white sugar. Bake in separate ovens, not two at a time in the same oven.
Bake at 400° for 13 minutes. DO NOT overbake.
