Sour Cream Coffee Cake

  • 1½ cups Bisquick 
  • ½ cup white sugar
  • 2 tbsp. soft butter
  • 1 egg 
  • ¾ cup sour cream
  • 1 tsp. vanilla

Combine all ingredients and beat well for one minute, spread into an 8" X 8" square pan and sprinkle with topping, below.

Topping

Mix ¼ cup flour, 3 tbsp. sugar, ¼ tsp. cinnamon and 2 tbsp. firm butter until crumbly. Use a hand pastry blender to get uniform size pieces.

Bake for 35 minutes at 350°, insert knife in middle to make sure cake is done in the middle. If not, bake for a few more minutes (no more than 7).
