Country-Style Tomato Soup

Ingredients

  • 5 or 6 ripe tomatoes, peeled and cut up
  • 1 onion, roughly chopped
  • 2 tsp. sugar
  • 1 tsp. salt
  • Pinch of allspice or ground cloves
  • 2 cups milk
  • 2½ tbs. soft butter or margarine
  • 2½ tbs. flour
  • Pinch of baking soda

Directions

Mix the first 5 ingredients in a blender until pureed. Blend in two batches if necessary. Pour into a saucepan and bring to a boil. Cover and simmer for 5 minutes.

Meanwhile, heat milk in a double boiler and stir in a smooth mixture of flour and butter. Whisk and cook until thick and smooth. Stir soda into tomatoes, then combine with the white sauce. Season to taste then dilute if needed with a little milk. Serve hot with parsley garnish.
