Crispy Potato Wedges
- 4 medium potatoes, cut into wedges
- 1 tbsp. vegetable oil
- ¼ tsp. fresh ground pepper
- ¼ tsp. salt
Put potatoes in a large bowl, add cold water and let stand for 15 minutes.
Preheat oven to 425̊, spray a nonstick baking sheet with vegetable cooking spray. Set aside.
Drain potatoes then pat dry with paper towels. Put potatoes in a clean large bowl. Sprinkle with oil, salt, pepper, toss to combine. Arrange potatoes on baking sheet.
Bake potatoes for 20 minutes. Using a spatula, turn potatoes and bake until golden, another 20 minutes.
For a spicier version, toss potatoes with herbs or seasoning before baking.
